Champagne Cazé-Thibaut

Châtillon-sur-Marne, Champagne • France

This 10th-generation estate is now run by rising star Fabien Cazé. His first vintage was from the 2013 harvest, when he took over the vineyard work and winemaking from his parents. He works six small parcels in Châtillon and Vandières (in the Vallée de la Marne), comprising a total of 2.66 hectares.

Fabien works without the use of herbicides or insecticides—the soil and the different expressions each terroir gives his wine are a quintessential part of his winemaking philosophy. He seeks to create elegant and precise wines of terroir and to continue the legacy that generations before him have fostered. The wines are unfiltered, and dosage levels are determined by blind taste test. Fabien’s “Naturellement” is 100% Pinot Meunier, aged over two years sur lattes and finished with 2.5 grams of dosage. The “Les Fourches” is 100% Chardonnay, Jossias is 100% Pinot Noir, and “Les Leriens” is a blend of all three grapes.
