Dominique Moreau chose to name her Côte des Bar domaine after her grandmother rather than herself. The 2.5-hectare estate consists of a single parcel on an east-facing slope, which was planted by massal selection, 90% to Pinot Noir and the rest to Chardonnay and Pinot Blanc.

Biodynamic farming and noninterventionalist winemaking are the rule here; the wines are fermented only with indigenous yeasts and are all bottled with zero dosage. These beautifully vinous wines are the height of artisanal Champagne.
