Ester Nin and Carles Ortiz, both leaders in biodynamic farming in the Priorat area southwest of Barcelona, came together to produce wine in 2007. They work with 13 certified organic and biodynamic hectares in the eastern part of the region, where higher altitudes and north-facing slopes give cooler temperatures and a marked freshness to the wines.
Mules are a vital part of their crew in the steep vineyards of primarily Garnacha and Cariñena, where everything is done as it was a century ago. Grapes are hand harvested, go through strict sorting, and are fermented with native yeasts before resting in large casks or amphorae. The wines are bottled according to the biodynamic calendar, with low to no sulfur additions.
